Peanut Butter Carrot Cookies

1/2 cup butter
1/2 cup packed brown sugar
3/4 cup white sugar
1/2 cup peanut butter
1 egg
1/4 cup milk
1 1/4 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2 cups rolled oats
1 cup grated carrots
1 cup semisweet chocolate chips

1. Preheat oven to 375 degrees.
2. Cream together the butter, brown sugar, white sugar, and peanut butter.
3. Add in the egg and the milk. Sift together the flour, salt, and baking soda and stir in. Stir in oats. Add in the carrots and chocolate chips. Drop by teaspoon onto cookie sheets and bake for 15 minutes.

  1. Okay, these are SO good. Mine turned out "puffier" than yours, as in, not as flat, but they still tasted great. The kids love them. We are going to see how they go as "breakfast" with some orange juice... they might all be eaten up by then!!
