Reindeer Chow




Ingredients


14 oz. Chex Cereal
7 oz. Sweetened, Shredded Coconut
5 oz. Slivered Almonds
1 1/2 cups Sugar
3/4 cup Butter
1 1/4 Cups Corn Syrup


Directions

  1. Mix together entire box of Chex cereal, coconut, and almonds. 
  2. In a medium saucepan, over med/high heat, mix together sugar, butter, light corn syrup. 
  3. Bring syrup mixture to a full boil, then turn down heat and cook for 3 minutes. STIR CONSTANTLY
  4. Pour syrup over the cereal mixture and stir to coat.
  5. Spread cereal evenly on wax paper and cool.
  6. Once cooled, break into smaller pieces and store in an air-tight container.



Audrey's Caramels

Caramel

1 C. butter
2 1/4 C. Brown Sugar
1 C. Light corn syrup
1 (14 oz) can sweetened condensed milk
1 tsp Vanilla


1)  Grease 8x8 pan

2)  In a heavy 4 quart saucepan, melt butter over medium heat; add brown sugar, corn syrup and milk. Stirring constantly heat to 242-248 F

3)  Remove from heat and stir in vanilla, pour in greased pan.

4)  When caramel has cooled and set, cut in to squares & chill in refrigerator until firm.

Wrap in individual wax paper pieces, or continue on to dip in melted chocolate.


Chocolate
1 lb. Milk Chocolate
1 TBSP. Butter

Pumpkin Crumble



I have to dig this recipe out of my email EVERY. autumn, and I finally got tired of it;) So, I'm posting it, so I can not only share, but keep track;) I'll post a picture after I make it.

This stuff is seriously the best pumpkin dessert you'll probably ever have. It speaks to the pumpkin pie lover, and it captures the pumpkin pie hater, it is everything delicious about pumpkin pie, and yet, not all pie-y, and filled with so much fall goodness! I LOVE it!!

Filling:

1 (15oz) can pumpkin
1 (14oz) can sweetened condensed milk
2 TBSP brown sugar
1 tsp cinnamon
1/2 tsp nutmeg (I usually don't put that in)
2 eggs


Topping:
1 box cake mix, yellow, vanilla, white, whatever you have
3/4 chopped pecans
1/2 melted butter

Heat oven to 350. Spray 9x13 pan with cooking spray. Combine all
ingredients for filling. Beat until smooth. Pour in to pan.

In bowl combine topping ingredients; mix well. Sprinkle evenly over filling.

Bake for 40-50 minutes. Until top is golden brown. Cool at least 30
minutes before serving.

Store leftovers in refrigerator.




Tuxedo Brownie Bites




Tuxedo Brownie Bites

Prepare a brownie mix or your favorite brownie recipe.  Mix according to directions (cake like).  Bake for 10-14 minutes at suggested temperature or until toothpick comes out clean.  Allow to cool for 5 minutes and indent with something (I use my pizza cutter blunt end).  Cool in pan 15 minutes and then remove and let completely cool on rack.  Fill with:

8 oz. softened cream cheese
1/4 c. powdered sugar
2 oz. white chocolate (melted)
1 c. cool whip.

Pipe filling into indentations.

Chocolate Mint Brownies




Chocolate Mint Brownies

Brownies:
1 1/2 c. melted butter
3/4 c. cocoa
3 c. sugar
6 eggs, beaten
1 1/2 tsp. vanilla
3/4 tsp salt
2 1/4 c. sifted flour

Frosting:
3/4 c. butter, softened
3 T. milk
3 c. powdered sugar
1 1/2 tsp. peppermint extract
green food coloring, optional

Chocolate layer:
2 1/4 c. semi-sweet chocolate chips
3/4 c. butter

Whisk together melted butter and cocoa. Add sugar, eggs, vanilla and salt. Mix well, then stir in flour by hand. Do not over-mix. Spread in greased 12x17-inch cookie sheet and bake at 350 for 25-30 min. Cool and then put in the freezer for 20 min. For frosting, mix butter, milk, powdered sugar and extract. Can color with green (or red) food coloring if desired. Frost brownies and then put in freezer for another 20 min. Melt chocolate chips and butter in a double boiler and spread on top of the frosting layer. Freeze another 20 min to set.

Nutella Sliders


These are soooo "Sandra Lee Style". (If you don't know who Sandra Lee is, she's on the Food Network, and she's all about "Semi-home-made")

These are a great, tasty little snack I like to make sometimes. And they really couldn't be more simple:

Ritz Crackers (these where the whole grain/wheat version)
Nutella
Banana, sliced

Smear Nutella atop cracker, then add banana slice. Done. Tasty little pop in your mouth bite. Heck, I bet they aren't even that "unhealthy".... think after-school snack.... :)



Oreo Mint Truffles





pkg. Oreo cookies 
ounces cream cheese, room temperature 
lb semi-sweet or milk chocolate
1/2 lb white chocolate
Peppermint extract (optional)

  1. Using a food processor, grind cookies to a fine powder. With a mixer, blend cookie powder and cream cheese until thoroughly mixed (there should be no white traces of cream cheese). Blend in a few drops of mint extract (optional).
  2. Roll into small balls and place on wax-lined cookie sheet. Refrigerate for 45 minutes.
  3. Line two cookie sheets with wax paper. In double-boiler, melt chocolate. Dip balls and coat thoroughly. With slotted spoon, lift balls out of chocolate and let excess chocolate drip off. Place on wax-paper-lined cookie sheet. Refridgerate until set.
  4. In separate double boiler, melt white chocolate. Using a fork, drizzle white chocolate over balls. Let cool.
  5. Store in airtight container in refrigerator.

Paula Deen's Pumpkin Bars


Bars:
4 eggs
1 2/3 cups granulated sugar
1 cup vegetable oil
1 15-ounce can pumpkin
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon (I subbed 1 of the tsp of cinnamon for 1/2 tsp
cloves, 1/2 tsp ginger)
1 teaspoon salt
1 teaspoon baking soda

Icing:
8-ounce package cream cheese, softened
1/2 cup butter or margarine, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract

Directions:
Preheat the oven to 350 degrees F.
Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a greased 13 by 10-inch baking pan. Bake for 30 minutes. Let cool completely before frosting. Cut into bars.
To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled pumpkin bars.

Oatmeal Apple Pear Crisp


2 cups cooking apples, peeled and sliced (about 2 large)
2 cups pears, peeled and sliced (about 3 large)
2 Tablespoons brown sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 -2 Tablespoon lemon juice
3/4 cup water

1 cup oats
1/3 cup all-purpose flour
3/4 cup brown sugar
1/4 teaspoon salt
1/2 cup butter, melted


While peeling apples and pears, keep them in the lemon juice so that they don't turn brown. Place apples in a greased shallow 9” square baking dish. Sprinkle (2 Tbsp) brown sugar, ground cinnamon, ground nutmeg and water. Combine remaining dry ingredients in a separate bowl; add melted butter, mixing until crumbly. Sprinkle crumb mixture on top of the apples. Bake at 375°F for 30 minutes or until apples are tender.

Cherry Cheesecake Cookies


3 1/2 cups all-purpose flour -Makes about 2 dozen cookies
2 tsp. baking powder
1 tsp. salt
1 (8 oz) packages cream cheese, softened
2 1/2 sticks butter, softened
1 1/2 cups sugar
2 large eggs
1 tsp. vanilla extract
1 cup graham cracker crumbs
2 cans (20 oz) cherry pie filling

Combine the flour, baking powder and salt in a bowl. In another bowl with an electric mixer, beat cream cheese, butter and sugar until smoooth and creamy, about 2 minutes. Add eggs and vanilla and mix until incorporated. Reduce speed to low and add the flour mixture and mix until just combined. Refrigerate dough until firm, at least 30 minutes.

Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or silpat liners. Place graham cracker crumbs in a shallow dish.
Roll the dough into 1 1/2 inch balls, then roll the balls in graham cracker crumbs. Place balls 2 inches apart on prepared baking sheets. Using a tablespoon measure, make an indentation in the center of each ball. Place 3 cherries in the dimple. Bake until golden brown around the edges, 12 to 14 minutes. Cool for five minutes on the sheet and then transfer to a wire rack to cool completely.

Blueberry Salad

1 1/2 cups crushed graham crackers
1/4 cup melted butter
1/4 cup sugar
1 can blueberry
8 oz cream cheese
1 cup sugar
2 pkgs. dream whip- mix according to instructions on pkg.

Mix together the crushed graham crackers, melted butter, and 1/4 cup sugar. Save 1/3 of mixture for the top. Beat the cream cheese and 1 cup of sugar then combine it with the dream whip.
Then layer in 9x13 pan:
1 layer of crust
1 layer of cream cheese mixture
1 layer of blueberries
1 layer of cream cheese mixture
Sprinkle the rest of the graham crackers crumbs on top
Refrigerate over night and enjoy!

Peanut Butter Carrot Cookies

1/2 cup butter
1/2 cup packed brown sugar
3/4 cup white sugar
1/2 cup peanut butter
1 egg
1/4 cup milk
1 1/4 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2 cups rolled oats
1 cup grated carrots
1 cup semisweet chocolate chips

1. Preheat oven to 375 degrees.
2. Cream together the butter, brown sugar, white sugar, and peanut butter.
3. Add in the egg and the milk. Sift together the flour, salt, and baking soda and stir in. Stir in oats. Add in the carrots and chocolate chips. Drop by teaspoon onto cookie sheets and bake for 15 minutes.

Pop Tarts

Okay, it's true, my kids LOVE poptarts, with all their heart and soul. But I can't bring myself to buy them anymore, first off they are the furthest thing from a "healthy" breakfast, and they are kinda priciey when you're talkin one box feeds for only one meal. I've been dreaming of a homemade type version and finally today, the first day the kdis are in school I remembered to google for homemade poptart recipes. This girl had one and they look like a delight!



Homemade Pop Tarts
Adapted from King Arthur Flour

Pastry
2 cups (8 1/2 ounces) all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup (2 sticks or 8 ounces) unsalted butter, cut into pats
1 large egg
2 tablespoons (1 ounce) milk

1 additional large egg (to brush on pastry)

Cinnamon Filling (enough for 9 tarts)
1/2 cup (3 3/4 ounces) brown sugar
1 to 1 1/2 teaspoons ground cinnamon, to taste
4 teaspoons all-purpose flour
1 large egg, to brush on pastry before filling

Jam Filling
3/4 cup (8 ounces) jam
1 tablespoon cornstarch mixed with 1 tablespoon cold water

Alternate fillings: 9 tablespoons chocolate chips, 9 tablespoons Nutella or other chocolate-hazelnut paste or 9 tablespoons of a delight of your choice, such as salted caramel or a nut paste

To make cinnamon filling: Whisk together the sugar, cinnamon, and flour.

To make jam filling: Mix the jam with the cornstarch/water in a small saucepan. Bring the mixture to a boil, and simmer, stirring, for 2 minutes. Remove from the heat, and set aside to cool. Use to fill the pastry tarts.

Make the dough: Whisk together the flour, sugar, and salt. Work in the butter with your fingers, pastry blender or food processor until pea-sized lumps of butter are still visible, and the mixture holds together when you squeeze it. If you’ve used a food processor, transfer the mixture to a large bowl. Whisk the first egg and milk together and stir them into the dough, mixing just until everything is cohesive, kneading briefly on a well-floured counter if necessary.

Divide the dough in half (approximately 8 1/4 ounces each), shape each half into a smooth rectangle, about 3×5 inches. You can roll this out immediately (see Warm Kitchen note below) or wrap each half in plastic and refrigerate for up to 2 days.

Assemble the tarts: If the dough has been chilled, remove it from the refrigerator and allow it to soften and become workable, about 15 to 30 minutes. Place one piece on a lightly floured work surface, and roll it into a rectangle about 1/8″ thick, large enough that you can trim it to an even 9″ x 12″. [You can use a 9" x 13" pan, laid on top, as guidance.] Repeat with the second piece of dough. Set trimmings aside. Cut each piece of dough into thirds – you’ll form nine 3″ x 4″ rectangles.

Beat the additional egg and brush it over the entire surface of the first dough. This will be the “inside” of the tart; the egg is to help glue the lid on. Place a heaping tablespoon of filling into the center of each rectangle, keeping a bare 1/2-inch perimeter around it. Place a second rectangle of dough atop the first, using your fingertips to press firmly around the pocket of filling, sealing the dough well on all sides. Press the tines of a fork all around the edge of the rectangle. Repeat with remaining tarts.

Gently place the tarts on a lightly greased or parchment-lined baking sheet. Prick the top of each tart multiple times with a fork; you want to make sure steam can escape, or the tarts will become billowy pillows rather than flat toaster pastries. Refrigerate the tarts (they don’t need to be covered) for 30 minutes, while you preheat your oven to 350°F.

Charming tip from King Arthur: Sprinkle the dough trimmings with cinnamon-sugar; these have nothing to do with your toaster pastries, but it’s a shame to discard them, and they make a wonderful snack. While the tarts are chilling, bake these trimmings for 13 to 15 minutes, till they’re golden brown.

Bake the tarts: Remove the tarts form the fridge, and bake them for 20 to 25 minutes, until they’re a light golden brown. Cool in pan on rack.

Whole Wheat Variation: I was itching to swap out 1/2 cup of the flour with whole wheat flour. I am sure it would make it more deliciously breakfast.

Pop Tart Minis: The biggest struggle I had with these was the size. I actually like my baked goods on the tiny size, thus I think this could make an adorable batch of 16 2 1/4″ x 3″ rectangles.

Savory Pop Tarts: Nix the sugar in the dough and halve the salt. Fill with pesto, cheese, ground nuts or olives, or any combination thereof. Brush the tops with additional egg wash and sprinkle with poppy or sesame seeds. Please invite me over.

Do ahead: The sweet versions should keep at room temperature in an airtight container for a week. If you’d like to make them further in advance, I vote for freezing them unbaked between layers of waxed paper, and baking them as you need.

Warm kitchen warning: Guys, I live in an inferno, so between the heat and the  humidity, me and this dough were struggling. To keep it from being too warm and soft, I was stuffing the trays of dough in the freezer for 10 minute shifts almost every time I worked with them. If you find yourself in an overly warm kitchen working with dough that gets soft too quickly, just keep using your freezer. The 10 minutes here and there that you extend this project will save you many gray hairs as the dough becomes easy to work with again.



Berry Torte



Ingredients:

1 cup sugar plus more for sprinkling
1/2 cup butter
1 cup flour
1 tsp. baking powder
2 eggs
1/2 tsp. almond extract
1 pint berries (Any kind works but they should be reasonably bite-sized. I usually use blueberries or blackberries. They can be fresh or frozen and there's no need to thaw.)
dash salt
lemon juice

Directions:

Cream 1 cup sugar and butter. Mix in flour, baking powder, dash of salt, 2 eggs, and the almond extract. Place into a greased and floured 9" spring form pan. Cover entire top surface of batter with berries. Sprinkle some sugar and lemon juice on top. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Remove spring form and serve warm or cooled.

May be frozen after a quick cooling. Defrost then reheat for 10 minutes at 350 degrees.

Dutch Apple Pie

This recipe is, TO DIE FOR GOOD, or atleast I think so! It's an apple pie recipe, but I substituted pears in place, and I made extra pie crust so I could spread it across a cookie sheet, then it came out kind of "tart" like, I then graciously called them "pear tarts"!


8-10 large Golden Delicious or Granny Smith apples, pared, peeled & sliced
Juice of one lemon, toss and coat apples

In small mixing bowl add:
1 cup of brown sugar
1 heaping TBsp. flour
dash of salt
1 1/2 tsp. cinnamon

Mix above ingredients together; pour over apples and toss well.


Place apple mixture in pie shell (unbaked), dot with butter (approx. 2 TBsp.)

Topping:
1 cup flour
1/2 - 3/4 c. white sugar
1 tsp, cinnamon
dash of salt

Mix together in small bowl then add: 1 cube [1/2 c.] of soft butter. cut into flour mixture until it resembles crumbs; sprinkle over top of apples.


Bake at 400 degrees for 35 minutes, lower temp to 350 and bake for 30 minutes more.

Apple Salad


This was Liz Lantry's recipe. :-)

Ingredients:

4 med-small apples
1 8oz tub light cool whip
1 c. mini marshmallows
1 20 oz can of pineapple tidbits, do not drain
1 small box fat free sugar free white chocolate pudding mix (or vanilla, or cheesecake)
Pecan pieces, if desired

Directions

Mix all ingredients. Top with nuts if desired. Chill and serve.


Cari's Rockin' Chocolate Chip Cookies

Cari made these and they were FANTASTIC, I had to recreate them -yum!

Ingredients:

1/2 c. butter
1/2 c. shortening
3/4 c. sugar
3/4 c. brown sugar
1 tsp vanilla
2 eggs
2 1/2 c. flour
3/4 tsp. salt
1 tsp. baking soda
1 bag chocolate chips (12 oz I think, I use part butterscotch chips)

Directions:

Combine butter, shortening and sugars and mix briefly, don't over-mix. Then add vanilla and egg, stir just until mixed in and wet. Add all dry ingredients (except chips) mix until flour is completely mixed in, don't over-mix or your butter and shortening will get too soft. Stir in chips. Best if refrigerated before baking. Bake for 8-10 minutes in 350 degree oven.

SNICKERS Apple Salad


OK this one takes forever to make good luck!

3-5 apples (different varieties for fun.)
1 large container of cool whip thawed
3 frozen snickers

Cut apples into bit size pieces, smashed frozen snicker with a rolling pin and add 3/4 of it to the mix. Next add all the cool whip until desired texture. Last add remaining snickers for garnish. YUMMY!!!

Apple Crisp


3 c peeled apples, sliced
1/2 c sugar
1 Tbsp flour
dash cinnamon

Toss lightly, put in greased and floured 8x10 pan. Pour 1/2 c water over the top.

3/4 c oatmeal
3/4 c brown sugar
3/4 c flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Combine, then work in 1/3 c butter. Sprinkle on top of apples. Bake 375 for 20-25 min.



"Tempt-Me" Truffles


Ingredients


4 c. powdered sugar

1 (8oz.) pkg cream cheese

5 (1oz.) squares unsweetened chocolate, melted

1 tsp. vanilla

toasted almonds, chopped

cocoa

powdered sugar



Directions
Gradually add 4 cups powdered sugar to cream cheese, mixing well. Add chocolate and vanilla. Mix well. Chill for a few hours. Shape into 1-inch balls. Roll to coat in almonds, cocoa or powdered sugar. Chill.
Makes 4 dozen.
