Audrey's Caramels

Caramel

1 C. butter
2 1/4 C. Brown Sugar
1 C. Light corn syrup
1 (14 oz) can sweetened condensed milk
1 tsp Vanilla


1)  Grease 8x8 pan

2)  In a heavy 4 quart saucepan, melt butter over medium heat; add brown sugar, corn syrup and milk. Stirring constantly heat to 242-248 F

3)  Remove from heat and stir in vanilla, pour in greased pan.

4)  When caramel has cooled and set, cut in to squares & chill in refrigerator until firm.

Wrap in individual wax paper pieces, or continue on to dip in melted chocolate.


Chocolate
1 lb. Milk Chocolate
1 TBSP. Butter

Caramel Apple Muffins


Ingredients

2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
2-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 egg
1 cup 2% milk
1/4 cup butter, melted
2 teaspoons vanilla extract
1/2 cup chopped peeled tart apple
12 caramels, chopped

TOPPING:
1/2 cup packed brown sugar
1/4 cup quick-cooking oats
3 tablespoons butter, melted
1 teaspoon ground cinnamon

Directions

In a large bowl, combine the flour, sugar, baking powder, cinnamon
and salt. In another bowl, whisk the egg, milk, butter and vanilla.
Stir into dry ingredients just until moistened. Fold in apple and
caramels.

Fill paper-lined muffin cups three-fourths full. Combine topping
ingredients; sprinkle over batter.

Bake at 350° for 20-25 minutes or until a toothpick inserted in.

Caramel Sauce



½ cup salted butter
1 cup dark brown sugar
½ cup dark corn syrup
1 tsp vanilla
1/4 tsp salt
cream

Mix butter, sugar, and syrup in microwave-safe bowl. Microwave for 1 minute, stir, and repeat. When all sugar is dissolved, microwave 2 minutes.*

Add vanilla and salt; cool.

Add cream to make 2 cups volume.

Make crepe, smear Nutella, add chopped banana, fold crepe, drizzle caramel.

*At this stage, add ½ tsp baking soda and vanilla, pour over 2 bags microwave popcorn, microwave 1 more minute for caramel popcorn.
